Today’s “Tasty Tuesday” healthy snack is a unique and healthy version of the traditional Sloppy Joe sandwich. Make sure you check for any food allergies you or your children may have prior to preparing this delicious snack. Enjoy!
Nutrient Enrich Sloppy Madness (Yield 6)
1 pound of ground lean chicken/turkey
½ c. chopped onion
1 T. minced garlic
1/2 c. baby spinach
¼ c. diced carrots
1 (8 oz.) can or regular tomato sauce
1/3 c. mild salsa
1 T. honey
1 T. apple cider honey
Whole grain buns
Method of Preparation
1. On medium heat place onions and garlic in skillet and cook till slightly brown or translucent. Then place ground meat and cook till completely brown.
2. Drain fat from the skillet; then return meat in skillet on medium heat.
3. Stir in remaining ingredients till completely mixed in skillet.
4. Reduce heat to medium low and let simmer for 20 minutes.
5. Once done, place on buns
